Spring Cleaning and Your Kitchen

Valentines Day Recipes from Kitchen Saver

Break away from the same old Valentine’s Day traditions and stay in this February 14th. After all, you don’t have to spend a fortune on dinner to make the night special. A nice, romantic, dinner for two is more intimate than any fancy restaurant ever could be.

Below you will find a few Valentine’s Day recipe ideas sure to please your significant other!

Valentine’s Day Entrée – Easy Yet Romantic Filet Mignon

Ingredients

2 (8 ounce) beef tenderloin steaks, cut 1 inch thick (about 1 pound total)

2 teaspoons olive oil

1/4 teaspoon onion powder

Salt and pepper to taste

2 tablespoons minced shallot

2 slices bacon

Directions

  1. Place oven rack in its highest position.
  2. Set oven to Broil.
  3. Rub steaks all over with olive oil. Sprinkle with onion powder, then with salt and pepper.
  4. Wrap one slice of bacon around each steak, and secure with a toothpick.
  5. Place steaks onto a broiler pan, and broil for 5 to 7 minutes. Turn the steaks over, and sprinkle the tops with shallots. Broil for an additional 5 to 7 minutes, or until the steaks are cooked to your liking.
  6. Enjoy!

Of course, this is just one of many entrée choices you have available. But please heed the following advice:

“Skip entrees with garlic,” recommends Kitchen Saver’s favorite mom, Rebecca Snyder-Gleason. “That is if you want good Valentine’s kisses!”

Valentine’s Day Dessert – Chocolate Lava Cake

Your sweetie definitely deserves some sweets on Valentine’s Day. And what is sweeter than a Chocolate Lava Cake?

Ingredients

Center:

2 ounces 60% Cacao Bittersweet Chocolate baking bar, broken or chopped into 1-inch pieces

1/4 cup heavy cream

Cake:

4 ounces 60% Cacao Bittersweet Chocolate baking bar, broken or chopped into 1-inch pieces

1/2 cup unsalted butter, cut into pieces

2 large whole eggs

2 large egg yolks

1/3 cup granulated white sugar

1/2 teaspoon pure vanilla extract

1/4 cup cake flour

Raspberries for garnish

Whipped cream for garnish

Directions

  1. To make the center: In the top of a double boiler or in a heatproof bowl over barely simmering water, melt the 2 ounces of chocolate with the cream. Whisk gently to blend.
  2. Refrigerate for about 2 hours, or until firm.
  3. With your hands, form mixture into six balls and then refrigerate until needed.
  4. Preheat the oven to 400 degrees F.
  5. Spray six 4-ounce ramekins or custard cups with cooking spray.
  6. To make the cakes: In the top of a double boiler or in a heatproof bowl over barely simmering water, melt the 4 ounces of chocolate and the butter, stirring occasionally until smooth.
  7. In a large bowl, with an electric mixer, whisk the whole eggs, egg yolks, sugar, and vanilla on high speed for about 5 minutes, or until thick and light. Fold the melted chocolate mixture and flour into the egg mixture just until combined. Spoon the cake batter into the ramekins. Place a chocolate ball in the middle of each ramekin.
  8. Bake for about 15 minutes, or until the cake is firm to the touch. Remove from the oven and let sit for about 5 minutes. Run a small, sharp knife around the inside of each ramekin, place an upside-down plate on top, invert, and remove the ramekin.
  9. Garnish with raspberries and a dollop of whipped cream.
  10. Enjoy!

Super Bowl Parties and Recipes

Over the past 6 months, from training camp and the preseason to the regular season and playoffs, the NFL has been building up to this one crowning moment…The Super Bowl. But for the fans, the Super Bowl is more than just a football game. It’s a reason to party!

According to Hallmark, the Super Bowl is now America’s top party occasion (sorry New Year’s Eve). And according to the American Institute of Food Distribution, Super Bowl Sunday is the second-largest day of food consumption in the U.S. behind only Thanksgiving. With that in mind, we at Kitchen Saver decided to compile a list of some of our favorite Super Bowl Recipes.

Super Bowl Bites (Mini Cheeseburgers)

Ingredients

1 pound ground beef chuck

1 (8 ounce) package shredded Cheddar cheese

1 tablespoon mayonnaise

1 (1 ounce) package dry onion soup mix

24 (2 inch square) dinner rolls, split

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix ground beef chuck, cheddar cheese, mayonnaise and dry onion soup mix.
  3. Spread even amounts of the ground beef onto the bottom half of each roll. Place top halves on, forming little sandwiches. Then place them on a baking sheet or baking pan and cover the pan tightly with aluminum foil.
  4. Bake for 30 to 35 minutes in the preheated oven, or until meat is cooked through.
  5. Enjoy!

Taco Meatballs

Ingredients

1 teaspoon kosher salt

1/2 teaspoon ground cumin

1/2 teaspoon chili powder

1 pound ground beef (ground chuck preferred)

1/2 pound ground pork

1/2 cup diced onion

1 small can (4 ounces) diced mild green chiles, drained

1 snack size bag tortilla chips, crushed, 1/2 to 3/4 cup crushed (tested with nacho flavor)

1 egg, beaten

2 cups prepared chunky salsa, divided use

1/8 cup chopped fresh cilantro

Additional chopped cilantro and shredded Mexican cheese for garnish

Directions

  1. Preheat oven to 375 F.
  2. Whisk together salt, cumin, and chili powder.
  3. Combine ground beef, ground pork, onion, chiles, crushed tortilla chips, egg, 1/2 cup of the salsa cilantro, and spices.
  4. Form into meatballs about 2 inches in diameter
  5. Place on prepared baking sheet 1 inch apart.
  6. Bake taco meatballs for 30 minutes.
  7. Heat remaining 1-1/2 cups salsa in a large saucepan. Add baked meatballs and toss to coat.
  8. To serve, sprinkle with chopped fresh cilantro and shredded Mexican cheese.
  9. Enjoy!

Snowy Day Recipes to Keep You Warm and Cozy

It might not have been very much snow this past weekend, but it got us at Kitchen Saver thinking about our favorite snowy day recipes. While we couldn’t agree on everyone’s selections, we could agree that the following two recipes are just perfect for warming you up on a cold, snowy day.

Hot Chocolate

Ingredients

3 cups milk

1/3 cup cocoa powder

1 tablespoon white sugar (to reduce the calories, substitute Splenda or Stevia)

1/2 teaspoon ground cinnamon

1 egg

Marshmallows (optional)

“I strongly recommend people go with a high quality cocoa powder,” said Kitchen Saver’s favorite mother, Rebecca Gleason. “It’s worth the dollar or so.”

Directions

  1. Put milk into a microwave-safe container and cook on High in microwave for 2 minutes. Mix in cocoa, sugar, and cinnamon. In a small bowl, whisk an egg until smooth, then mix it into the chocolate mixture.
  2. Return to microwave and cook on High for 3 to 4 minutes or until foamy (be careful not to let it boil.) Whisk until smooth and pour into 3 mugs. Garnish with a sprinkle of cinnamon and marshmallows if desired.
  3. And for minty hot chocolate, toss in one of your gazillion candy canes leftover from the holidays as a stirrer.
  4. Enjoy!

Chicken Noodle Soup

Ingredients

2 1/2 cups wide egg noodles

1 teaspoon vegetable oil

12 cups chicken broth (Rebecca recommends using chicken stock instead of broth for more flavor!)

1 1/2 tablespoons salt

1 teaspoon poultry seasoning

1 cup chopped celery

1 cup chopped onion

1/3 cup cornstarch

1/4 cup water

3 cups diced, cooked chicken meat

Directions

  1. Bring a large pot of lightly salted water to a boil. Add egg noodles and oil, and boil for 8 minutes, or until tender. Drain, and rinse under cool running water.
  2. In a large saucepan or Dutch oven, combine broth, salt, and poultry seasoning. Bring to a boil. Stir in celery and onion. Reduce heat, cover, and simmer 15 minutes.
  3. In a small bowl, mix cornstarch and water together until cornstarch is completely dissolved. Gradually add to soup, stirring constantly. Stir in noodles and chicken, and heat through.
  4. Enjoy!

“Of course, you serve chicken soup with saltine crackers,” Rebecca said.

What Goes on in Cruise Ship Kitchens

Last week we discussed airline kitchens. This week, we are going to aim a bit lower as we examine cruise ship galleys (kitchens).

Commercial airplanes and in-flight dining were first popularized in the 1930s. By that time, ocean liners had already perfected the commercial dining experience.

The passenger ship industry initially began to flourish after the invention of the steam engine in 1719, but it was not until 1849 that one company – White Star Lines – started aggressively building the first fleet of ocean liners. White Star Lines revolutionized trans-Atlantic passage, building ships that broke records in both size and grandeur. And at the heart of these grand vessels was (and still is) the dining room.

But how do cruise ships handle such large crowds and high demands? With large staffs and even larger kitchens.

The cruise ship kitchen is one of the largest areas on the ship that the average passenger will never see. And it has to be. With the average ship carrying over 3,000 passengers (plus another 1,250 crewmembers), these ocean liners often employ over 150 cooks and crank out well over 10,000 meals a day. So as you can imagine, life in a cruise ship kitchen can get a little hectic.

One article I read described the kitchen of a cruise ship as “controlled chaos.” And you know what? I can’t think of any better way to describe the goings on of cruise ship kitchens.

Following World War I, former military pilots saw an opportunity to make some extra money and began flying the first known commercial flights. These inaugural flights were extremely primitive and offered no frills, including in-flight services. Soon, though, these pilots realized there was a need to add some luxury to their transcontinental flights. Speed and excitement were not enough to lure upper class, wealthy passengers, who preferred the luxurious staterooms of ocean liners to unpleasant nature of early airline flights.

So, airlines adopted the motto “if you can’t beat ‘em, join ‘em!”

Airlines began to adopt not only the lavish practices of ocean liners, turning aircraft into flying dining rooms – but also some of traditional nautical terminology. Aircraft became known as flying boats; they had ports and starboards, not rights and lefts; and weight staff, which worked in galleys (American Airlines installed the first rudimentary galley in their DC3 in 1936), became known as stewards.

Yet, despite the fact that this all sounds rather glamorous, it wasn’t. Unpressurized cabins and a lack of electricity made in-flight food preservation and preparation a challenge. It was not until 1939 that pressurized cabins and purpose-built galleys began to revolutionize the airline industry. Then in the 40’s and 50’s, when flight became exceeding popular and passenger numbers began to increase, airlines did away with their flying dining rooms and in-flight service started to resemble the style we are all familiar with today.

Airline Galleys

The Douglas Aircraft DC-3 was the first airplane with a planned galley built for food service. Today, aircraft galleys include refrigeration food and beverage storage, room and equipment for food preparation.

Food is partly/mostly cooked prior to being loaded onto to the airplane, and it is finished in the galley. This technique means that some foods work better than others. For example, you aren’t going to see risotto anytime soon.

How to Make a Kitchen Handicap Accessible

While the Americans with Disabilities Act (ADA) resulted in ADA Accessible Guidelines (ADAAG), which provided handicap accessibility specifications for public buildings, there are no such guidelines for residential buildings. And for the over 30 million Americans who use either a wheelchair or walker while living at home, accessibility around the home is a huge obstacle.

From the bedroom to the bathroom and even the kitchen, homes are not built to be handicap accessible. But for the sake of this article, we are going to focus strictly on the kitchen.

The biggest obstacles when designing an accessible kitchen are sinks, cabinets, and countertops. This is where Kitchen Saver can help.
