Valentines Day Recipes from Kitchen Saver

Break away from the same old Valentine’s Day traditions and stay in this February 14th. After all, you don’t have to spend a fortune on dinner to make the night special. A nice, romantic, dinner for two is more intimate than any fancy restaurant ever could be.

Below you will find a few Valentine’s Day recipe ideas sure to please your significant other!

Valentine’s Day Entrée – Easy Yet Romantic Filet Mignon

Ingredients

2 (8 ounce) beef tenderloin steaks, cut 1 inch thick (about 1 pound total)

2 teaspoons olive oil

1/4 teaspoon onion powder

Salt and pepper to taste

2 tablespoons minced shallot

2 slices bacon

Directions

  1. Place oven rack in its highest position.
  2. Set oven to Broil.
  3. Rub steaks all over with olive oil. Sprinkle with onion powder, then with salt and pepper.
  4. Wrap one slice of bacon around each steak, and secure with a toothpick.
  5. Place steaks onto a broiler pan, and broil for 5 to 7 minutes. Turn the steaks over, and sprinkle the tops with shallots. Broil for an additional 5 to 7 minutes, or until the steaks are cooked to your liking.
  6. Enjoy!

Of course, this is just one of many entrée choices you have available. But please heed the following advice:

Valentine’s Day Dessert – Chocolate Lava Cake

Your sweetie definitely deserves some sweets on Valentine’s Day. And what is sweeter than a Chocolate Lava Cake?

Ingredients

Center:

2 ounces 60% Cacao Bittersweet Chocolate baking bar, broken or chopped into 1-inch pieces

1/4 cup heavy cream

Cake:

4 ounces 60% Cacao Bittersweet Chocolate baking bar, broken or chopped into 1-inch pieces

1/2 cup unsalted butter, cut into pieces

2 large whole eggs

2 large egg yolks

1/3 cup granulated white sugar

1/2 teaspoon pure vanilla extract

1/4 cup cake flour

Raspberries for garnish

Whipped cream for garnish

Directions

  1. To make the center: In the top of a double boiler or in a heatproof bowl over barely simmering water, melt the 2 ounces of chocolate with the cream. Whisk gently to blend.
  2. Refrigerate for about 2 hours, or until firm.
  3. With your hands, form mixture into six balls and then refrigerate until needed.
  4. Preheat the oven to 400 degrees F.
  5. Spray six 4-ounce ramekins or custard cups with cooking spray.
  6. To make the cakes: In the top of a double boiler or in a heatproof bowl over barely simmering water, melt the 4 ounces of chocolate and the butter, stirring occasionally until smooth.
  7. In a large bowl, with an electric mixer, whisk the whole eggs, egg yolks, sugar, and vanilla on high speed for about 5 minutes, or until thick and light. Fold the melted chocolate mixture and flour into the egg mixture just until combined. Spoon the cake batter into the ramekins. Place a chocolate ball in the middle of each ramekin.
  8. Bake for about 15 minutes, or until the cake is firm to the touch. Remove from the oven and let sit for about 5 minutes. Run a small, sharp knife around the inside of each ramekin, place an upside-down plate on top, invert, and remove the ramekin.
  9. Garnish with raspberries and a dollop of whipped cream.
  10. Enjoy!

Snowy Day Recipes to Keep You Warm and Cozy

It might not have been very much snow this past weekend, but it got us at Kitchen Saver thinking about our favorite snowy day recipes. While we couldn’t agree on everyone’s selections, we could agree that the following two recipes are just perfect for warming you up on a cold, snowy day.

Hot Chocolate

Ingredients

3 cups milk

1/3 cup cocoa powder

1 tablespoon white sugar (to reduce the calories, substitute Splenda or Stevia)

1/2 teaspoon ground cinnamon

1 egg

Marshmallows (optional)

“I strongly recommend people go with a high quality cocoa powder,” said Kitchen Saver’s favorite mother, Rebecca Gleason. “It’s worth the dollar or so.”

Directions

  1. Put milk into a microwave-safe container and cook on High in microwave for 2 minutes. Mix in cocoa, sugar, and cinnamon. In a small bowl, whisk an egg until smooth, then mix it into the chocolate mixture.
  2. Return to microwave and cook on High for 3 to 4 minutes or until foamy (be careful not to let it boil.) Whisk until smooth and pour into 3 mugs. Garnish with a sprinkle of cinnamon and marshmallows if desired.
  3. And for minty hot chocolate, toss in one of your gazillion candy canes leftover from the holidays as a stirrer.
  4. Enjoy!

Chicken Noodle Soup

Ingredients

2 1/2 cups wide egg noodles

1 teaspoon vegetable oil

12 cups chicken broth (Rebecca recommends using chicken stock instead of broth for more flavor!)

1 1/2 tablespoons salt

1 teaspoon poultry seasoning

1 cup chopped celery

1 cup chopped onion

1/3 cup cornstarch

1/4 cup water

3 cups diced, cooked chicken meat

Directions

  1. Bring a large pot of lightly salted water to a boil. Add egg noodles and oil, and boil for 8 minutes, or until tender. Drain, and rinse under cool running water.
  2. In a large saucepan or Dutch oven, combine broth, salt, and poultry seasoning. Bring to a boil. Stir in celery and onion. Reduce heat, cover, and simmer 15 minutes.
  3. In a small bowl, mix cornstarch and water together until cornstarch is completely dissolved. Gradually add to soup, stirring constantly. Stir in noodles and chicken, and heat through.
  4. Enjoy!

“Of course, you serve chicken soup with saltine crackers,” Rebecca said.

Prepare Ahead Recipes for Vacations: Lasagna

When you go on vacation, you have several options for your meals. You can go out to eat every night, which can become very expensive very quickly. You can cook your meals at your vacation rental, but you never know what kind of kitchen facilities and/or supplies you will have available (and you probably want to spend your precious vacation time relaxing rather than cooking, anyway). Or, you could prepare a few meals ahead of time and freeze them so all you have to do is defrost them and heat them up?

The recipe we are sharing with you this week was passed down to Rebecca by her mother, who would always prepare and freeze a few meals before leaving on any vacation.

“There was never a family vacation where we didn’t have a lasagna and a beef brisket,” said Rebecca. “And [my mother] made them big enough that there were always leftovers for a lunch or even two.”

Rebecca’s recipe is a great time saving and cost-effective way to bring the comforts of home with you on any family vacation.

So let’s get started…

Lasagna Recipe

1 1/2 lbs. ground beef
1 (32 oz.) jar spaghetti sauce
1 (16 oz.) carton cottage cheese
1 box lasagna noodles
1/2 c. Parmesan cheese
1 tbsp. parsley flakes
1 tsp. oregano
3 sm. pkgs. sliced Mozzarella cheese

Brown ground beef and add spaghetti sauce. In a bowl, combine cottage cheese, parsley flakes, and oregano. In a 9 x 13 inch greased pan, layer: uncooked lasagna noodles, sliced cheese, cottage cheese mixture, meat and sauce mixture; repeat as best you can, ending with a layer of noodles covered by sauce mixture. Top with Parmesan cheese. Pour 1/2 cup water around sides of pan. Cover and freeze overnight.

When traveling, make sure you pack the lasagna in a cooler with ice/ice packs. Then, when you are ready, bake the pre-made lasagna at 350 degrees for at least an hour. Let stand 15 minutes before serving.

Cheddar Crunch Chicken Tenders

(Serves 4-6)

If you are looking for the perfect dinner recipe for your family, look no further. This Cheddar Crunch Chicken recipe is not only delicious, but the kids will enjoy making it almost as much as they love eating it. With one of the main ingredients being crushed Cheese-Its, you can let your youngsters mash the cheesy little snacks into bits while you prepare the rest of the meal, truly making this meal a family affair.

So let’s get started…

Basic Batter Recipe

1 cup flour

1 tablespoon plus 1 teaspoon baking powder

1/4 teaspoon sugar

1/4 teaspoon salt

1 cup milk

3 beaten eggs

5 tablespoons melted butter

1 tablespoon vegetable oil

In a bowl, whisk together 1 cup flour, 1 tablespoon plus 1 teaspoon baking powder, 1/4 teaspoon sugar and 1/4 teaspoon salt. Beat in 1 cup milk, 3 beaten eggs, 5 tablespoons melted butter and 1 tablespoon vegetable oil until smooth.

Cheddar Crunch Chicken Tenders

12 boneless, skinless chicken tenders

1 small box cheese snack crackers (i.e. Cheez-Its or Cheese Nips)

Chicken Batter

6 tablespoons of canola or other vegetable oil

 

1.   Pour batter into a large plastic Ziploc bag. Place chicken tenders into bag, seal, and shake to coat.

2.   Place cheddar crackers into a second large plastic Ziploc bag. Seal and crush crackers into small pieces.

3.   Heat 4 tablespoons of oil in a large skillet over medium high heat.

4.   When oil has heated, place two chicken tenders into the cracker bag, seal, and shake to coat. Place the tenders into the skillet. Repeat until 6 tenders are in the pan.

5.   Cook 6-7 minutes on each side, or until chicken has reached an internal temperature of 165 degrees and juices run clear.

6.   Remove tenders from skillet. Add two more tablespoons of vegetable oil to the skillet.

7.   Repeat steps 4 and 5 for the remaining 6 tenders.

Rebecca’s recipe is great for a family friendly summertime meal that everyone will enjoy. The Cheddar Crunch Chicken Tenders work well when paired with some sweet potato fries and a few steamed vegetables.
